I swear these taste exactly like Thin Mints, its amazing. Crispy, chocolatey, minty, but not toothpaste minty. I was inspired by the recipe on Quest's blog to make these, however, when I wanted to make them, I did not have the chocolate chips or coconut oil that the recipe called for, so I decided to experiment with what I had, and let me tell you, I am so beyond amazed. These seriously have exactly the same taste and texture as real Thin Mints and I am blown away.
Ingredients:
- 1 Chocolate brownie Quest Bar
-2 tbsp unsweetened cocoa powder
-2 tbsp milk of choice (I use unsweetened almond)
-sweetener to taste (for regular sugar, anywhere between 1 1/2 to 2 1/2 tbsp works well)
-3-4 drops of peppermint extract
-dash of salt
Directions:
-Pre-heat oven or toaster oven to 400 degrees
-Cut Quest Bar into four pieces, and flatten them into four flat circles (microwave a few seconds to make it more malleable)
-Bake the "cookies" for 5 minutes
-Meanwhile, to make the mint chocolate coating, combine cocoa powder and milk in a microwave safe bowl and microwave for 10-15 seconds and then stir the cocoa powder thoroughly into the milk until well combined. Add sweetener to taste, and peppermint extract to taste, and a dash of salt and mix it all together.
-Once cookies are mostly cooled, coat them in the chocolatey sauce and refrigerate for about 10-15 minutes and enjoy :D
I apologize for being all "add ____ 'to taste'", I just know people have different preferences for sweetness and whatnot, so I don't want to only go according to my personal preferences.
