Oven Baked Zucchini "Fries"


So today I finally got to experiment with what I've been dying to make for a while now, zucchini fries, yay :D

I must say, these came out so perfect. Incredibly crispy and full of flavor. I used Italian seasonings with these, but I bet there are all kinds of amazing combinations and flavors you could mess with.

Ingredients:
2-3 medium sized zucchini, sliced in thin sticks
1/4 cup white whole wheat flour (any flour will work)
1/4 cup egg whites (or 2 whole eggs)
1/2 cup bread crumbs (*see note for making your own bread crumbs below)
2 tbsp grated parmesan
1 tbsp Italian seasoning (or a combination of oregano, basil, garlic powder)
salt & pepper to taste

**To make your own bread crumbs, take a few slices of any bread (can be fresh or stale), I used the two "butt" ends of a loaf, and pre-heat your oven to 350 degrees. Put the bread slices straight onto the oven rack and bake for about 7 minutes, or until crisp and dry. DON'T let them get browned and toasted! You want them dried. Once they are dried, break up into little pieces and put them in a blender/food processor. Depending on how much you have, you might wanna do a little at a time. Process the bread until it reaches the fine-ness of bread crumbs and transfer them into a container. Season according to this recipe or to your own liking!

Directions:
-Preheat the oven to 425 degrees, spray a baking sheet, and set aside.
-In a shallow dish, combine bread crumbs, parmesan, and Italian seasoning and mix until even.
-In a separate shallow dish, whisk eggs/egg whites
-Place zucchini sticks and flour into a plastic bag and shake the bag until zucchini sticks are lightly coated in flour. Dip each stick into the eggs, then roll them around in the bread crumb mixture, making sure to coat each side. Place the sticks onto the baking sheet and bake for 20-25 minutes or until crispy. Flip halfway through baking.

Allow to cool for a few minutes on the baking sheet. They will really crisp up! Enjoy!
