Pizza Chickpea Patties



This is hands down one of my best creations ever. I died. srsly.

Ingredients:
-one 15oz can of chickpeas, rinsed and drained
-1/4 cup tomato sauce/pizza sauce/marinara sauce
-handful of fresh basil
-2 tbsp breadcrumbs or rolled oats (plus more if the mixture is too wet)
-1 tbsp cornmeal (optional)
-2-3 cloves garlic, depending on preference
-half a small chopped onion
-1 tbsp grated parmesan
-1/4 cup mozzarella cheese
-Italian seasoning to taste
-salt & pepper to taste

Directions:
-Combine all ingredients in a food processor/veggichop until it pretty much looks like you're dealing with meatballs


separate and shape into patties (can make around 4 or 5), and slap 'em onto a pan coated with olive oil on medium low heat. *sizzle*


Depending on the consistency of your mixture, it depends how long until you can flip them. Don't worry, as long as you keep below medium heat, they won't burn before they're cooked. Once you flip them, they should like nice and crisp and browned.





Once they're done, plate 'em nicely over some fresh spinach or whatever you'd like.
