This pie is so easy and so delicious. I adapted the recipe from Betty Crocker, but used oat flour instead of pancake mix. The oats paired with the apples just make it so much better.
Ingredients:
FILLING:
-3 cups sliced peeled apples (I recommend Macintosh)
-1 heaping tsp ground cinnamon
-1/4 tsp nutmeg
-1/2 cup oat flour*
-1/2 cup white sugar (or equivalent sweetener of choice)
-1/4 tsp baking powder
-1/2 cup milk
-1 tbsp melted butter
-2 eggs
*you can make your own oat flour by measuring slightly more than 1/2 cup of rolled oats (or quick oats, old fashioned, etc), and grinding them up in a blender for about 1 minute until it resembles a flour.
*To make this gluten free, make sure to use certified gluten free oats/oat flour
STREUSEL:
-1/2 cup oat flour
-1/4 cup chopped nuts
-1/4 cup packed brown sugar
-2 tbsp firm butter
Directions:
-preheat oven to 325 degrees, spray a 9 inch glass pie plate
-In a medium bowl, toss together apples, cinnamon, and spice until apple slices are evenly coated. Spread evenly on bottom of pie plate.
-In medium bowl, combine remaining filling ingredients together and stir until blended and batter-like. Pour over the apple mixture in pie plate.
-In a small bowl, mix all the streusel ingredients together until crumbly, and sprinkle over the top of the pie filling.
-Bake 40 to 45 minutes, cool for at least five minutes.
Store in refrigerator.
