Awesome Banana Bread 8-)

I've been on a hunt, for quite some time. I've been searching for the perfect homemade banana bread recipe that is both healthier than traditional banana bread, but still resembles the taste and texture you'd get from a box mix. It's taken me almost two years, tons of bananas, and all kinds of recipes, and I've finally found "the one" that came out exactly how I wanted it to be.

What's so great about this recipe anyway?

1. Well, first off, the ingredients are very easy. I actually had them all on hand when I came across the recipe. Nothing crazy expensive either.
2. This recipe uses all whole wheat flour, AND doesn't come out dense!
3. It's more nutritious compared to your traditional banana bread

4. Let's talk about the outside. It comes out of the oven practically smiling at you. Slightly browned top, warm banana aroma, and those awesome little cracks.



5. Now let's talk about the inside. That's where the real goodies are. The texture is perfectly light and fluffy. It does not crumble, it is not spongy, it is not dense. It's just perfect. 


6. The flavor is perfectly sweet, warm, and nutty just like banana bread should be. It has a nice buttery taste, even though very little butter is actually used in the recipe. 


 Let's take a look at the recipe now.

Ingredients:
1½ c. whole wheat pastry flour
2 t. baking powder
¼ t. baking soda
½ t. salt.
¼ t. cinnamon
½ c. nuts (optional-I didn't use nuts but I plan to in the future when I have them!)
2 T.+2 t. butter
4 t. plain greek yogurt
heaping ½ c. packed brown sugar (or sweetener of choice!)
2 eggs
2 very over-ripe bananas
cinnamon sugar (optional)

Instructions: 
Preheat oven to 350.
Mix flour, baking soda, baking powder, salt, and nuts (if using) in a bowl.
In your stand mixer bowl, cream butter, yogurt, and brown sugar together until smooth. Add in the eggs and beat one at a time until combined. While beating, add in flour mixture slowly and bananas. Mix well. At this point you can start hand mixing to really get in there. Pour into a loaf pan. Bake 45-60 minutes. Test if done by using a toothpick.
